The first powerful sunrays are emerging this spring and with it our forests are filled with the smell of wild garlic growing. With this recipe you can bring the smell of spring into your own home in no time by cooking this spicy dish of pasta. Contrary to the traditional form of pesto we stick to a minimalist pesto recipe consistent of wild garlic, oil and pasta water. The parmesan and the pine kernels are deliberately added on top so that we can preserve and emphasise the individual taste of each single one of them and to create additional texture.

Instructions
1. Bring pasta to the boil in salted water and boil until al dente.
2. Meanwhile add pine kernels to a frying pan without oil and cook at medium to high heat until golden-brown.
3. Coarsely chop wild garlic and keep some aside for decoration purposes. Add 100 ml of pasta water and olive oil to the rest of the wild garlic and blend thoroughly.
4. Mix wild garlic pesto with cooked pasta, add salt and pepper and place on plates. Add additional wild garlic, roasted pine kernels and strips of peeled parmesan on top.
