This hearty dish of beans with bacon proves that climatefriendly recipes can include meat, if used in moderation and skillfully, combined with seasonal vegetables and other CO2-friendly ingredients such as potatoes. The crisp and fresh beans harmonise wonderfully with the roasted flavours and spice of the bacon and onions whilst the potatoes provide a solid base. This meal tastes best when served in autumn when the days are becoming shorter and cooler again.

500ggreen beans
240gbacon cubes
800gpotatoes
300gonions or shallots
2 cloves ofgarlic 
2 tbsp (30ml)rapeseed oil
20gparsil, flat-leaved

Instructions

1. Bring 1.5 litres of water to the boil.

2. Cut up potatoes into pieces of around 2cm in size. Add potatoes to a large frying pan with rapeseed oil. Cover with lid and fry on high heat for 15-20 min. stirring occasionally.

3. Cut onions into rings and chop parsil.

4. Prepare beans: It’s best to prepare 5-10 beans at once. Adjust the stems evenly to the right hand side and remove, then do the same at the left hand side. Add salt the boiling water and add beans. Cook for 6-7 min. until al dente.

5. Whilst the beans are cooking: Add bacon cubes, onion rings, crushed garlic and parsil to the, by now, golden potatoes and fry together. Add salt.

6. Drain beans with cold water, dry well (e.g. with a clean dish cloth) and add to potatoes. Season to taste with pepper and serve.
