Due to brussels sprouts’ bitter and typical cabbage flavour they are not everyone’s cup of tea! However, roasting them in the oven brings out the best in these little green and super vitamin-rich sprouts: Perfect tenderness, subtly roasted flavour and balanced bitterness. To mix it up a little, season brussels sprouts with lemon juice and zest and serve with creamy cottage cheese. Roasted brussels sprouts are easy to prepare and do not require many ingredients, thus lending themselves perfectly for making a quick and easy dinner during the week.

300g | cottage cheese |
6 tbsp (90ml) | rapeseed oil |
200g | bread |
1 | lemon |
salt, pepper |

Instructions
1. Pre-heat the oven to 220°C (428°F) degrees.
2. Wash brussels sprouts, dry stalk thoroughly and carefully cut off the stalk leaving the leaves intact. Put into a bowl and mix with rapeseed oil. Place in the oven on one or two baking trays covered with baking paper. Cook for 20-25 min. until golden and still al dente.
3. Zest lemon and put aside. Season brussels sprouts with salt and sprinkle lemon juice on top. Mix well.
4. Place brussels sprouts in bowls. Put two tablespoons of cottage cheese on top. Garnish with pepper and lemon zest.
