In less than 10 minutes you can conjure up this tasty chickpea soup with its’ refined Asian flavour adding coconut milk, coriander and peanuts. All ingredients, apart from coriander, can be kept in stock, thus you will have a quick and easy dish up your sleeve at any time. 🙂
Ingredients for 4 servings
2 cans / 800g | chick peas |
1 can / 800g | tomatoes, chopped |
250ml | coconut milk, unsweetened |
20g | coriander |
20g | peanuts, salted |
400g | bread |
salt & pepper |

Instructions
1. Heat chickpeas with its’ liquid, chopped tomatoes and coconut milk in a big pot on high heat. Meanwhile finely chop coriander and peanuts.
2. Blend all ingredients in the pot as soon as they are heated properly. Season with salt and pepper. If you want the soup a bit thicker, keep simmering until it has reached your desired consistency.
3. Divide among bowls and top with coriander and peanuts. Serve with a slice of bread.
